Charcuterie has a rich history, but there are some varieties that are outright classics. Here we present our versions of those classics.

All handmade on our farm with pork from our own pasture-raised Rare Breed Tamworth pigs or local Manx Beef Cattle.

Presented in a beautiful wicker hamper the perfect gift for lovers of charcuterie.

Manx Tamworth Chorizo
Winner of a coveted 3 star Great Taste Award. 
Great Taste Award judge - "The warmth of almost roasted garlic and spice was particularly enjoyed. Long, lingering sunny days here.”

We use only the very finest Pimenton, wine and other ingredients to produce a satisfyingly spicy cured meat, enhanced by the succulent fat of our rare breed Tamworth pigs. Perfect with light-bodied red wines.

100g vacuum-packed stick. Ingredients –  Tamworth Pork, Sea Salt, Pimenton paprika, Garlic, Wine, Demerara sugar, Oregano, Cayenne, Dextrose, Curing Salt, Vitamin C

Manx Tamworth Salami
Winner of a 2 star Great Taste Award. 
Great Taste Awards Judge’s comment – "Super looking salami, nice dark meat with good firm texture and an even spread of fat, easy to cut, fruity in flavour with the garlic and fennel both noticeable in flavour. A very easy to eat classic salami”

After a trip to Italy and much sampling of artisanal Italian charcuterie we created the Close Leece Farm Manx Salami; a delicate blend of black pepper and fennel seeds with fine wine. The salami is perfect eaten with some fresh crusty bread or with a few slices of mozzarella and a drizzle of olive oil.

Manx Nduja
Winner of a 2 star Great Taste Award. 
Great Taste Award judge - "A very good looking Nduja with a mature aroma and yet a soft and yielding paste. The meat has some wonderful texture, there is a warming pimenton growing on the palate and a sweet note which balances the heat. A great long finish and a peak of spice lasting long afterwards”.

Nduja has seen a surge in popularity over recent years, particularly as an ingredient to bring spice and colour to the finest modern cuisine. Close Leece Farm is well placed to make Nduja as the quality of the fat is paramount – and there is no better fat than that from a happy Tamworth! We cut no corners and source the finest ingredients and spices. The result is a spicy spreadable charcuterie – a surprise to many, but a treat to all.

Manx Saucisson
An evolution of a "small batch", our Manx Saucisson is slow cured and based on classic French recipes. We add spices that introduce notes of garlic, cloves, cinnamon and mace, with a hint of the finest Vodka. A Manx twist on a classic French style of charcuterie.

Manx Coppa
Winner of a Great Taste Award. 
Great Taste Award judge - "A good natural colour with fine aroma on the nose. Rich pungent taste. Pleasant aftertaste which made the judges want more.. chews beautifully with creamy fat. Melts on the tongue. The judges enjoyed the feeling in the mouth and thought the balance of meat and fat was just right”.

The quality of the shoulder joint and neck of our Rare Breed pasture raised Tamworth pigs is exceptional. We have used it in all of our charcuterie and serve it in our café and restaurant with great success. So there was a certain inevitability to us developing a beautiful Coppa. Our master butcher prepares the joint carefully and we hang it for three months following the curing period. The final Coppa has a beautiful marbling and is a treat for lovers of charcuterie. Perfect at the centre of a charcuterie board or served solo with crusty bread and cheese.

Manx Beef Bresaola
A fine example of this single muscle charcuterie. Made from Beef raised in the verdant pastures of the Isle of Man, by our team of expert charcuterie producers. The taste of the beef is clear and the meat is very lean. Our first Beef product and we are very pleased with it!

Manx Tamworth Guanciale
Handmade on the farm with pork from our pasture-raised Rare Breed Tamworth pigs. An exciting addition to our charcuterie range is the Guanciale. A wonderfully tasty cured meat from the jowls, that brings real flavour to any dish.
