All handmade on our farm with pork from our pasture-raised Rare Breed Tamworth pigs and native Manx Loaghtan Lambs.

Manx Salami
Winner of a 2 star Great Taste Award. 
Great Taste Awards Judge’s comment – "Super looking salami, nice dark meat with good firm texture and an even spread of fat, easy to cut, fruity in flavour with the garlic and fennel both noticeable in flavour.

Manx Saucisson
New for 2020. And we are delighted with the result!
As ever, slow cured. Here we started with the classic French charcuterie and added our own take on it with spices which introduce notes of garlic, cloves, cinnamon and mace. All finished off with a hint of Vodka.
100g vacuum-packed stick. Ingredients –  Tamworth Pork, Sea Salt, Fennel, Black Pepper, Garlic, Wine, Demerara sugar, Oregano, Dextrose, Curing Salt, Vitamin C

Manx Loaghtan Lamb Salami
Winner of a Great Taste Award. 
Great Taste Awards Judge’s comment – “This is interesting, using a rare native breed to produce a product which is very much of today. It is fatty, but it IS lamb, and we liked the balance of the pepper with the herbs and spices. We were pleased that the fennel wasn't shouting too loudly. The cure is moist, and not too dry, and the mouth feel is spicy/herby and peppery, not greasy, with a lingering finish in which the pepper balances well with the cured lamb”

Manx Salami Forte
Winner of a 2 star Great Taste Award. 
Great Taste Awards Judge’s comment – "A good looking salami, soft warming garlic fuzzing away through the background, pepper on the tip of the tongue, salty but not overly salty, good, mature, well aged pork and melting fat. Lingering, some sweetness and also a deeply savoury clean flavour on the palate.”

Manx Thermonuclear Chorizo
A relatively new arrival to our range. We start with the outright heat of the Ghost Chilli Pepper and then complement that with the fruity inferno of the hottest chilli in the word – the Carolina Reaper. To this furnace, we blend in Arbol Chilli to give greater depth to the flavour. WARNING - THIS IS AN EXTREMELY SPICY CHORIZO!

Manx Coppa
Winner of a Great Taste Award, 2019. 
Great Taste Awards Judge’s comment – "A good natural colour with fine aroma on the nose. Rich pungent taste. Pleasant aftertaste which made the judges want more.. chews beautifully with creamy fat. Melts on the tongue. The judges enjoyed the feeling in the mouth and thought the balance of meat and fat was just right”
The quality of the shoulder joint and neck of our Rare Breed pasture-raised Tamworth pigs is exceptional. We have used it in all of our charcuterie and serve it in our café and restaurant with great success. So there was a certain inevitability to us developing a beautiful Coppa. Our master butcher prepares the joint carefully and we hang it for three months following the curing period.
The final Coppa has a beautiful marbling and is a treat for lovers of charcuterie. Perfect at the center of a charcuterie board or served solo with crusty bread and cheese.

Manx Air-dried smoked ham cured in orange, juniper berry and vodka.

A "small-batch" addition to our charcuterie range. Fruity juniper berries and oranges with a hint of vodka go exceptionally well with our gently smoked air dried Tamworth hams.
