We loved the chew, the mouthfeel and the fact that the spicing had maintained individual identity whilst melding together well and enhancing rather than overshadowing the flavour of the meat."
"A deep gamey aroma of pork - so appetising. The slightly resistant texture demands we chew well and this in turn releases the flavour. Pork is, agreeably, the dominant flavour but we suspect the vodka, garlic and spices are the backing singers that bring such a degree of harmony to the flavour. For a small slice there is a considerable flavour delivery and it lingers. Moreish."
